Start with fresh filtered water that is just below boiling (92-96C). If you have a thermometer, there’s never been a better time to put it to use! While you’re waiting for your water to cool from the boil (approximately 30 seconds), fit the filter paper in your cone and place it on your cup or jug. Pour the water through your filter and cone to rinse the paper and warm the ceramic at the same time.
Your freshly ground coffee should be finer than a French press setting but coarser than espresso. A helpful measure of the correct grind size is the time it takes to brew – and 2.5 minutes is a good target. Put your ground coffee in the filter-lined cone and place the cone on top of your warm cup or jug.
If you have scales, place the cup and cone set up on the scales. Start by pouring just enough water to cover the grounds (use twice
the coffee weight- in this case, 34g of water). Leave the fresh coffee to ‘bloom’ for about one minute. This period helps the coffee to de-gas and rearrange itself into an even bed, to encourage an even extraction.
Pour the rest of your water slowly in a circular motion. Raise the coffee bed just a centimeter up the cone’s height. Maintain this height (while avoiding the edges where the coffee and filter meet) until you’ve added the rest of your 265g of water. Finally, drink and enjoy!
